I know the feeling that's why I got my Honda VTX 1800 and my Indian Chieftain for sale. But lm still looking forward to those "Golden Years", everyone mentions.
You are absolutely right leveling the Venture makes it handle like a real motorcycle. Yamha missed the boat in having these bikes setup higher in the front forks. Low speed handling is terrible on account of this blunder in their engineering.

I think it would be cool to put a V Max engine in a Harley Ultra frame and use a belt drive. Call it a Harley Ultra Max. Have the best of both worlds great handling and awesome power.

Engine is starving for gas. Since you cleaned carbs bet floats are out of adjustment or jets still have debris In them. I think your fuel pump is ok being a 2007.
I agree with those above gas has sweeped into the crankcase from leaving the pitcock open during storage. Drain and refill with fresh oil just half way on the sight glass at bike level position. Start it and ride like you stole it.
