Going south from Colorado

Hello everyone, recently I picked up 2008 Venture with 29,000 miles, and I absolutely love this thing. I took a break from riding for few years, and I am getting back into it.

I would like to head south from Denver, and not wait for spring  thinking of going to New Mexico, Texas and Arizona. 

Any roads, scenic routes, point of interest I should visit and see? I am planning on camping during my trip. Any recommended camp sites/camp grounds?

Will pack as little as possible. Have all of the needed gear (small tent, bag, air pad, etc). Have gym membership for showers when needed.
