Sylvester Posted May 27, 2019 #1 Posted May 27, 2019 Put four racks of St. Louis ribs on at 9:00 am. in the smoker, took them off at 11:00 am and wrapped them in foil with a shot of apple juice. Will take them out of the foil at 1:00 pm and put them back on the smoker for one hour. Fall off the bone goodness with my the sweet and spicy rub and my own sauce (molasses based) they will be awesome. Giving one each to three great neighbors including my sauce and keeping one for Jana and me. Thank you veterens for your service.

Condor Posted May 28, 2019 #6 Posted May 28, 2019 Still learning to use the smoker.....will you share your recipe? Dave Nothing fancy... I wet them down with balsamic vinegar and then put on Pappy's Rub. About a half hour before taking them out I use brown sugar, apple juice, and a smidgen more balsamic for the finish glaze. I start at 400degs for about half an hour, and then reduce the heat to 225 for about 4 hours. I remember one time we were cooking ribs, chicken, and tri-tip for the Camillia Cup Regatta, a local weekend sailboat race, on Saturday night. We planned on a couple hundred to stay for dinner. Once the aroma started to drift across the marina they started coming out of the woodwork. We held are own for the first 300, but eventually ran out of brickets. Left the last three racks in the BBQ and the next morning when I opened up the lid they had finished over night just from the heat of the cooker. When I cut them up the knife went thru the bones like they weren't even there... And they were awesome!! :-)
dfitzbiz Posted May 28, 2019 #7 Posted May 28, 2019 Extreme caution should be used when smoking ribs. A bit of grease could drip on your Tony Llamas. DISASTER—-ROTFL Sent from my iPhone using Tapatalk

Local democrats are asking for my endorsements. Sorry to say the republicans want nothing to do with me.

He's wearing Ah-di-da's..... Never reported to be a cowboy but I have owned a number of quarter horses, and rode many barrel races. When riding I never had anything in my pockets for obvious reasons. And I never owned any Ah-di-da's. But your still welcome to live next to me. I don't use brickets just hard woods. Lots of hickory, mesquite and alder plus a little fruit wood, depending on what's in cooking.

Can't wait to see the crew again. Careful wearing those Birkenstocks, toes are a bad place for sunburn and road rash. Do they come in steel toe and with a matching man purse?
Sylvester Posted May 28, 2019 Author #12 Posted May 28, 2019 No on the hard toe, but I have a sequined fanny pack that goes perfectly with my short shorts and tank top. I think I am making myself sick.
