OK, I have ridden dirt bikes all my life 30+ years, have also ridden street and this is my biggest bike so far.

I have never had a bike with a heel n toe shifter and although I'm getting the hang of it, its not normal :) Well the thought did occur to me to switch the shifting pattern, to toe for up shift and heel for down shift, which led me to youtube where I discovered that sport bikes are going to this pattern - where its called GP shifting - and this makes a lot of sense.

Anyway, I'd like to know if anyone has done this to their RSTD or RSV?

Hmm, I have issues trying to get a size 12 under the peg to shift.

To reverse the shift pattern on the RS series you'd have to make an attachment point BELOW the heal-tow shifter and lengthen the shift rod. The reason some sport bikes offer the "reverse" shift pattern is a more positive engagement of the gear with a toe-down upshift.
